Preparing the Salad

    Combine Salad Ingredients

    In a large salad bowl, combine arugula, mixed greens, sun-dried tomatoes, red onion, artichoke hearts, pumpkin seeds, goat cheese crumbles, and garlic croutons.

Making the Sweet Basil Vinaigrette

    Blend Vinaigrette Ingredients

    In a blender, combine fresh basil, olive oil, red wine vinegar, honey, minced garlic clove, salt, and black pepper. Blend until smooth.

    Dress the Salad

    Drizzle the sweet basil vinaigrette over the salad mixture in the bowl. Toss gently to combine.

Cooking the Filet Mignon

    Season the Steaks

    Season filet mignon steaks with salt and black pepper on both sides.

    Sear the Steaks

    In a skillet, heat olive oil over medium-high heat. Add the seasoned filet mignon and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
