Preparation of Fries

Cut the Potatoes
Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick).

Dry the Potatoes
Drain the soaked potatoes and pat them dry with a clean kitchen towel.

Heat the Oil
In a deep pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry until golden brown, about 4-6 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle with salt to taste.

Heat the Pan
In a large skillet or cast-iron pan, heat over medium-high heat until very hot.

Sear the Steak
Add the steaks to the hot pan. Sear for about 4-5 minutes on one side until a crust forms.

Add Aromatics
Flip the steaks and add the garlic cloves and rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare, basting the steaks with the melted fat and juices.

Remove the steaks from the pan and let them rest for 5 minutes before slicing.
