Pappardelle Pasta

Method

Short Rib Ragù

    Prepare the Short Ribs

    Season the beef short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large pot, heat the olive oil over medium-high heat. Add the seasoned short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrot, and celery. Sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for about 5 minutes until reduced by half.

    Add Remaining Ingredients

    Add the beef broth, crushed tomatoes, thyme, and bay leaves to the pot. Stir to combine.

    Slow Cook the Ribs

    Return the short ribs to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 2.5 to 3 hours until the meat is tender and falls off the bone.

    Shred the Meat

    Once cooked, remove the short ribs from the pot and shred the meat, discarding the bones and excess fat. Return the shredded meat to the sauce and stir well.

Pappardelle Pasta

    Cook the Pasta

    In a large pot, bring water to a boil. Add 1 tablespoon of salt and then the pappardelle pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain the Pasta

    Once cooked, reserve a cup of pasta water and drain the pasta. Do not rinse.

Assembly

    Combine Pasta and Sauce

    In the pot with the ragù, add the cooked pappardelle and toss to combine, adding reserved pasta water if needed to loosen the sauce.

    Serve

    Plate the pappardelle and top with chopped fresh basil and grated Parmesan cheese. Enjoy your Short Rib Pappardelle!
