Cook Pasta

Boil Water
In a large pot, bring salted water to a boil.

Cook Pasta
Add rigatoni pasta to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.
Prepare Vodka Sauce

Sauté Garlic
In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and red pepper flakes, cooking until fragrant, about 1-2 minutes.

Add Vodka
Carefully add vodka to the skillet and let it simmer for about 2-3 minutes to reduce slightly.

Add Tomatoes and Cream
Stir in the crushed tomatoes and heavy cream. Season with salt and black pepper. Simmer for about 10 minutes, stirring occasionally.

Stir in the grated Parmesan cheese until melted and combined. Remove from heat.
Make Whipped Ricotta

In a mixing bowl, combine ricotta cheese, heavy cream, salt, and black pepper. Using an electric mixer, whip until smooth and creamy.
Combine and Serve

Add the cooked rigatoni to the vodka sauce, tossing to coat evenly.
