Cooking Pasta

    Boil Water

    In a large pot, bring 4-6 quarts of water to a boil. Add a pinch of salt.

    Cook Pasta

    Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside. Reserve some pasta water if needed for the sauce.

Preparing Vegetables

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add bell pepper, zucchini, carrot, and broccoli to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

    Add Cherry Tomatoes

    Stir in the cherry tomatoes and continue to cook for another 2 minutes.

Combining Ingredients

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Pour in the remaining olive oil, and toss everything together over medium heat.

    Season the Dish

    Season with salt and black pepper to taste. If the mixture seems dry, add a little reserved pasta water.

    Add Cheese and Basil

    Remove from heat and stir in the grated Parmesan cheese and chopped fresh basil until well combined.

Serving

    Plate the Dish

    Serve warm, garnished with additional Parmesan cheese and basil if desired.
