Steak Preparation

    Season the Steak

    Generously season the Long Island strip steaks with salt and black pepper on both sides. Allow them to sit at room temperature for 30 minutes.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from skillet and let rest for 5 minutes before slicing.

Horseradish Cream Sauce Preparation

    Mix the Sauce

    In a bowl, combine sour cream, prepared horseradish, lemon juice, chopped chives, salt, and black pepper. Mix well until smooth. Adjust seasoning to taste.

Bistro Fries Preparation

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips (about 1/4 inch thick). Soak them in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    In a large pot, heat vegetable oil to 350°F (175°C). Drain and pat dry the potato strips. Fry them in batches until golden brown and crispy, about 4-5 minutes per batch. Remove fries, drain on paper towels, and season with salt and black pepper while hot.
