Directions
- 1
Cook the Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
- 2
Prepare the Chicken
While the pasta is cooking, season the chicken breasts with salt and black pepper. Heat the olive oil in a grill pan over medium heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest for a few minutes before slicing.
- 3
Make the Alfredo Sauce
In a large saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Reduce the heat and stir in the Parmesan cheese until melted and the sauce is smooth.
- 4
Combine Pasta and Sauce
Add the drained fettuccine to the Alfredo sauce. Toss until the pasta is well coated. If the sauce is too thick, you can add a little more cream or pasta water to reach your desired consistency.
- 5
Serve
Slice the grilled chicken and place it on top of the fettuccine. Garnish with chopped parsley and additional Parmesan cheese if desired. Serve immediately.
