Method
Chicken
- 1
Prepare Chicken
In a large bowl, marinate the chicken breasts in buttermilk for at least 1 hour or overnight in the refrigerator for maximum tenderness.
- 2
Prepare Coating
In another bowl, mix together the flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, and baking powder.
- 3
Heat Oil
In a deep frying pan or dutch oven, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Coat Chicken
Remove chicken from buttermilk and allow excess to drip off. Dredge the chicken in the flour mixture, ensuring it's fully coated.
- 5
Fry Chicken
Carefully place the coated chicken in the hot oil and fry for about 6-8 minutes per side, or until golden brown and cooked through. Remove and let drain on a paper towel.
Waffles
- 6
Prepare Waffle Batter
In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, beat the eggs and then mix in the buttermilk, melted butter, and vanilla extract.
- 7
Combine Ingredients
Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing.
- 8
Cook Waffles
Preheat your waffle iron according to the manufacturer's instructions. Pour the batter into the preheated waffle iron and cook until golden and crispy, usually 5-7 minutes.
