Crust Preparation

    Preheat your oven to 325°F (160°C).

    Mix Crust Ingredients

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and crumbly.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Bake the Crust

    Bake the crust in the preheated oven for 10 minutes, then remove and let cool while preparing the filling.

Filling Preparation

    Beat Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

    Add Sugar and Sour Cream

    Gradually add the granulated sugar and sour cream, mixing until fully incorporated.

    Incorporate Vanilla and Eggs

    Add the vanilla extract and eggs one at a time, mixing on low speed until just combined. Avoid overmixing.

    Pour Filling into Crust

    Pour the cream cheese filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Topping Preparation

    In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries.

    Let the strawberries sit for about 15-20 minutes to release their juices.
