Boil the Eggs
Place 6 large eggs in a pot and cover them with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes, then transfer to an ice bath to cool.

Prepare the Filling
Once the eggs are cool, peel them and cut in half lengthwise. Remove the yolks and place them in a bowl. Mash the yolks with 1 ripe avocado, 1 tablespoon lemon juice, and 0.5 teaspoon salt until smooth.

Crispy Prosciutto
In a skillet over medium heat, cook 4 slices of prosciutto until crispy. Remove from the heat and let cool, then crumble into small pieces.

Mix in the Prosciutto
Fold the crumbled prosciutto into the avocado-yolk mixture until evenly combined.

Add Toppings
Top each filled egg with a spoonful of chow chow. Dice 4 cherry tomatoes and 2 radishes, and sprinkle over the deviled eggs.

Finish with a sprinkle of fresh chives for an added touch of flavor and color.
