Method

Calamari Preparation

    Clean the Calamari

    Rinse the fresh calamari under cold water, remove the head, and pull out the innards. Cut the body into rings and set aside.

    Prepare the Breading

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Whisk together until well mixed.

    Prepare the Wet Mixture

    In another bowl, whisk the eggs and buttermilk together until smooth.

    Coat the Calamari

    Dip each calamari ring first into the wet mixture, allowing excess to drip off, then dredge in the flour mixture until fully coated.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings in batches to the hot oil. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Marinara Sauce Preparation

    Sauté Garlic

    In a saucepan over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

    Combine Ingredients

    Add the crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar to the saucepan. Stir well to combine.

    Simmer the Sauce

    Bring the sauce to a simmer. Reduce heat to low and let it simmer for 15-20 minutes, stirring occasionally.
