Preparation

    Prepare the ingredients

    Gather all the ingredients: bourbon, cold-pressed lemon juice, egg white, simple syrup, Angostura bitters, and lemon slice.

    Juicing the lemons

    Using a cold-press juicer, extract juice from fresh lemons until you have 3 oz of lemon juice. Strain if necessary to remove pulp.

    Make the simple syrup

    If you don't have simple syrup, combine equal parts sugar and water in a saucepan. Heat until the sugar dissolves, then cool before using.

Mixing

    Combine ingredients

    In a cocktail shaker, add 2 oz of bourbon, 3 oz of cold-pressed lemon juice, 0.5 oz of simple syrup, and the egg white.

    Dry shake

    Shake the mixture vigorously without ice for about 15 seconds to emulsify the egg white and create foam.

    Wet shake

    Add ice to the shaker and shake again for another 15 seconds until well chilled.

Serving

    Strain and serve

    Strain the mixture into a chilled coupe or rocks glass. The foam should form a nice layer on top.

    Garnish

    Add 2 dashes of Angostura bitters on top of the foam and place a lemon slice on the rim of the glass for garnish.
