Chicken Marinade Preparation

Prepare the Marinade
In a bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, black pepper, salt, and olive oil until well combined.

Marinate the Chicken
Coat the chicken breasts with the marinade mixture, ensuring they are evenly covered. Let the chicken marinate for at least 30 minutes, preferably in the refrigerator.
Cooking the Chicken

Grill the Chicken
Preheat your grill to medium-high heat. Once hot, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).

Melt the Cheese
During the last minute of cooking, place slices of pepper jack cheese on top of the chicken and close the grill lid to melt the cheese.

Prepare the Ingredients
While the chicken is cooking, prepare the other wrap ingredients. Slice the tomato and wash the romaine lettuce.

Assemble the Wrap
Lay out a sun-dried tomato tortilla. Spread a layer of guacamole over the tortilla, then add a piece of grilled chicken topped with melted pepper jack cheese, followed by romaine lettuce and sliced tomato.

Add the Chipotle Mayo
Drizzle chipotle mayo over the fillings, then fold the sides of the tortilla inwards and roll it up tightly from the bottom to form a wrap.
