Prepare Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until the rice is tender and water is absorbed.

Dice Ahi Tuna
Cut the ahi tuna into small cubes (about 1/2 inch) and place it in a bowl.

Prepare Pineapple, Bell Pepper, and Carrot
Dice the pineapple, chop the red bell pepper, and julienne the carrot into thin strips. Add them to the bowl with the tuna.

Mix Dressing
In a small bowl, whisk together soy sauce and sesame oil. Pour the mixture over the tuna and vegetables, and gently toss to combine.

Garnish
Chop the green onions and sprinkle them over the bowl. Add sesame seeds and seaweed salad on top as desired.
Assemble the Poke Bowl

In a serving bowl, add a scoop of the cooled sushi rice as the base.

Spoon the tuna and vegetable mixture over the sushi rice.
