Sushi Rice Preparation

    Rinse and Cook Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear. Place the rinsed rice in a pot with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 20 minutes. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt until dissolved. Gently fold this mixture into the cooked rice, being careful not to mash the grains.

Poke Bowl Assembly

    Prepare the Ingredients

    While the rice is cooking, dice 1 pound of Ahi tuna into bite-sized cubes. Chop 1 cup of pineapple, 1 medium red bell pepper, and 1 medium carrot into small pieces.

    Make the Poke Sauce

    In a bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, and chopped green onions. Mix well.

    Combine Tuna and Sauce

    In a separate bowl, combine the diced Ahi tuna with the poke sauce. Allow to marinate for about 10 minutes.

    Assemble the Poke Bowl

    In a serving bowl, place a scoop of sushi rice at the bottom. Top with the marinated Ahi tuna, pineapple, red bell pepper, and carrot. Sprinkle with sesame seeds for garnish.
