Preparation of Fries

    Cut and Season Potatoes

    Preheat the oven to 425°F (220°C). Wash and peel the potatoes, then cut them into thin strips. In a bowl, toss the potato strips with olive oil, salt, and pepper.

    Spread the seasoned potato strips onto a baking sheet in a single layer. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

Preparation of Panini

    Make Avocado Mayo

    In a small bowl, mash the avocado and mix it with mayonnaise until smooth. Set aside.

    Assemble the Panini

    On two slices of wheatberry bread, spread a generous amount of avocado mayo. Layer on the smoked turkey, fontina cheese, arugula, and pickled shallots. Top with the remaining slices of bread.

    Preheat a panini press or a skillet over medium heat. If using a skillet, lightly grease it with olive oil. Grill the assembled panini for about 3-5 minutes per side, or until the bread is golden brown and the cheese is melted.
