Place the chopped potatoes in a large pot, add cold water to cover them, and add 1 tablespoon of salt. Bring to a boil over high heat, then reduce to medium and simmer until potatoes are tender, about 15-20 minutes.

Preheat your oven to 400°F (200°C). Take the whole garlic bulbs and slice the top off to expose the cloves.
