Roasted Chicken Preparation

    Marinate the Chicken

    In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, the juice of one lemon, salt, and pepper to create the marinade.

    Prepare the Chicken

    Rinse the whole chicken under cold water and pat dry with paper towels. Rub the marinade all over the chicken, making sure to get it under the skin as well. Place the chicken in a large zip-lock bag or a bowl and marinate in the refrigerator for at least 1 hour, preferably overnight.

    Roast the Chicken

    Preheat the oven to 425°F (220°C). Place the marinated chicken in a roasting pan and roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Let it rest for 10 minutes before carving.

Garlic Mashed Potatoes Preparation

    Prepare the Potatoes

    Peel and chop the potatoes into even chunks. Place them in a large pot, cover with cold water, and add a pinch of salt.

    Boil the Potatoes

    Bring the water to a boil over medium-high heat. Cook the potatoes for about 15-20 minutes, or until fork-tender. Drain the potatoes and return them to the pot.

    Mash the Potatoes

    In a small saucepan, melt the butter over low heat with minced garlic until fragrant. Add the melted butter and garlic to the drained potatoes. Pour in the milk, and mash everything together until smooth and creamy. Season with salt and pepper to taste.
