Prepare the Pork Belly

Preheat the Oven
Preheat your oven to 300°F (150°C).

Season the Pork
In a bowl, combine salt, black pepper, garlic powder, and paprika. Rub this spice mixture all over the pork belly, ensuring it is evenly coated.

Roast the Pork Belly
Place the seasoned pork belly on a baking sheet lined with parchment paper. Roast in the preheated oven for 2 to 2.5 hours, or until the pork is tender and the fat has rendered.

Cool and Cut
Remove the pork belly from the oven and let it cool slightly. Once cool, cut the pork belly into bite-sized cubes.
Make the Tangy Sauce

Combine Sauce Ingredients
In a small saucepan, combine soy sauce, honey, rice vinegar, Sriracha, and sesame oil. Stir well to combine.

Thicken the Sauce
In a small bowl, mix cornstarch and water together until smooth. Add this mixture to the saucepan over medium heat. Stir continuously until the sauce thickens, about 3-5 minutes. Remove from heat.
Combine and Serve

In a large mixing bowl, toss the cubed pork belly with the tangy sauce until evenly coated.

Serve the pork belly bites hot, garnished with green onions or sesame seeds if desired.
