Prepare Poaching Liquid
In a saucepan, combine the red wine, granulated sugar, cinnamon stick, and vanilla extract. Bring to a simmer over medium heat, stirring until the sugar is dissolved.

Poach the Pears
Peel the pears and cut a small slice off the bottom so they can stand upright. Place the pears in the saucepan with the poaching liquid. Cover and simmer for about 20-25 minutes, or until the pears are tender. Remove pears and allow them to cool in the liquid.

Prepare Vinaigrette
In a small bowl, whisk together the olive oil, apple cider vinegar, honey, ground cinnamon, salt, and black pepper until well combined.

In a large salad bowl, combine the spring mix salad greens, crumbled Point Reyes bleu cheese, sliced poached pears, and candied pecans. Drizzle with cinnamon vinaigrette and toss gently to combine.
