Chicken Preparation

    Marinate the Chicken

    In a bowl, combine the buttermilk, salt, black pepper, cayenne pepper, paprika, garlic powder, and onion powder. Add the chicken thighs and marinate for at least 1 hour, preferably overnight.

    Dredge the Chicken

    In a shallow dish, add the all-purpose flour. Remove the chicken from the marinade, letting the excess drip off, and dredge each piece in the flour, coating evenly. Shake off any excess flour.

    Fry the Chicken

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the chicken. Fry for about 6-8 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Hot Sauce

    Make the Hot Sauce

    In a small saucepan over medium heat, combine Ken's Nashville Hot Sauce, cayenne pepper, and brown sugar. Stir until the sugar is dissolved and the mixture is heated through. Remove from heat and set aside.

    Coat the Chicken

    Once the chicken is fried, dip each piece into the hot sauce mixture, ensuring it’s fully coated. Return to the paper towels to allow excess sauce to drip off.

Coleslaw

    Make the Coleslaw

    In a large bowl, combine the shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well until all the ingredients are evenly coated. Refrigerate for at least 30 minutes before serving.

Sandwich Assembly

    Assemble the Sandwich

    On each brioche bun, place a piece of the hot chicken, top with coleslaw and a few slices of pickles. Close the sandwich with the top half of the bun.

Fries

    Prepare the Fries

    Cook the frozen French fries according to package instructions until golden and crispy. Serve alongside the sandwiches.
