Method

For the Grilled Salmon

  1. 1

    Prepare the marinade

In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and lemon juice.

  2. 2

    Marinate the salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Make sure the fillets are evenly coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Grill the salmon

Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Cook for 5-7 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

For the Seasonal Vegetables

  1. 4

    Prepare the vegetables

Trim the ends of the asparagus, peel the carrots, and slice the zucchini into rounds.

  2. 5

    Season the vegetables

In a bowl, toss the prepared vegetables with olive oil, salt, and black pepper.

  3. 6

    Cook the vegetables

On the grill, cook the vegetables for about 5-10 minutes, turning occasionally, until they are tender and slightly charred.

For the Lemon Butter Sauce

  1. 7

    Melt the butter

In a small saucepan over low heat, melt the butter.

  2. 8

    Add garlic and lemon juice

Once the butter is melted, add minced garlic and lemon juice. Stir and cook for 1-2 minutes until fragrant.

  3. 9

    Finish the sauce

Stir in chopped parsley, and season with salt and black pepper to taste. Remove from heat.
