Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust them lightly with flour. This will help prevent the cakes from sticking.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Gradually add the melted chocolate mixture to the egg and sugar mixture, stirring continuously until fully incorporated.

  5. 5

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture, then add the vanilla extract. Fold gently until just combined; do not overmix.

Baking

  1. 6

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling them about 3/4 full. This allows room for the cakes to rise.

  2. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look set and slightly cracked.

  3. 8

    Cool and Serve

Remove from the oven and let them sit for 1 minute. Carefully run a knife around the edges, then invert onto plates. Serve immediately with a scoop of vanilla ice cream on top.
