Cheese Drops

Method

Cheese Drops

  1. 1

    Prepare the Cheese Mixture

In a large mixing bowl, combine the ricotta cheese, all-purpose flour, eggs, grated Parmesan cheese, salt, black pepper, and chopped parsley. Mix until the ingredients are well incorporated and form a thick batter.

  2. 2

    Heat the Oil

In a large skillet, heat the olive oil over medium heat until shimmering.

  3. 3

    Form and Fry the Drops

Using a tablespoon, scoop the cheese mixture and drop it into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.

House-Made Sauce

  1. 4

    Sauté the Vegetables

In a saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until soft and translucent, about 5 minutes.

  2. 5

    Add Tomatoes and Season

Stir in the diced tomatoes, basil, salt, black pepper, and sugar. Bring to a simmer and cook for an additional 10-15 minutes, allowing the flavors to meld.

  3. 6

    Blend the Sauce (Optional)

For a smoother sauce, blend the mixture using an immersion blender or transfer to a blender and pulse until smooth. Return to heat to keep warm.
