Soup Base

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic and Squash

    Stir in the minced garlic and cook for an additional minute until fragrant. Add the cubed butternut squash and stir to combine.

    Add Broth and Seasoning

    Pour in the vegetable broth and add salt and black pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, or until the squash is tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return it to the pot.

Sage Cream

    Prepare the Sage Cream

    In a small bowl, combine the heavy cream and finely chopped sage. Mix well and set aside.

Toasted Pepitas

    Toast the Pepitas

    In a skillet over medium heat, add the pumpkin seeds and olive oil. Sprinkle with salt and toast for about 5-7 minutes, stirring frequently, until the seeds are golden and fragrant.
