For the Braised Short Rib

Prepare the Short Ribs
Preheat your oven to 325°F (165°C). Season the beef short ribs generously with salt and black pepper.

Braise
Cover the pot and transfer it to the oven. Braise for 2.5 to 3 hours, until the meat is tender and falls off the bone.

Prepare the Stock
In a saucepan, heat the chicken stock over low heat and keep it warm.

Sauté Shallots
In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced shallots and sauté until translucent, about 3-4 minutes.

Cook the Rice
Add Arborio rice to the skillet and toast it for 1-2 minutes, stirring constantly. Then, add 1 cup of warm chicken stock gradually, stirring until absorbed.

Add More Stock
Continue to add stock, one cup at a time, stirring frequently until the rice is creamy and al dente, about 18-20 minutes.

Incorporate Cheeses
Once the risotto is cooked, stir in the Point Reyes bleu cheese, remaining butter, and Parmesan cheese. Season with salt and black pepper to taste.

Prepare the Asparagus
Trim the woody ends off the asparagus spears and rinse them under cold water.

Roast the Asparagus
Preheat the oven to 400°F (200°C). Toss the asparagus with olive oil, salt, and black pepper. Spread them on a baking sheet.

Roast in the oven for about 15-20 minutes until tender and slightly crispy.
