Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

Cut in Butter
Add the unsalted butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Milk and Cheese
Stir in the whole milk and shredded white cheddar cheese until just combined. Be careful not to overmix.

Shape the Biscuits
Turn the dough onto a lightly floured surface and pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter.

Bake the Biscuits
Place the biscuits on a baking sheet lined with parchment paper and bake in the preheated oven for 12-15 minutes or until golden brown.

Cook the Sausage
In a large skillet over medium heat, add the smoked sausage and cook until browned and cooked through, breaking it apart with a spatula, about 5-7 minutes.

Make the Roux
Sprinkle the tablespoon of all-purpose flour over the sausage and stir to combine, cooking for about 1 minute.

Add Milk
Gradually pour in the milk, stirring constantly to avoid lumps. Cook until the mixture thickens, about 3-5 minutes.

Season the Gravy
Add salt, black pepper, and red pepper flakes to the gravy. Stir well and let it simmer for another 2-3 minutes.
