    Prepare the batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps. Let it sit for about 15 minutes.

    Heat the oil

    In a large, deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter in; it should sizzle and rise to the surface.

    Batter the cod

    Pat the cod fillets dry with paper towels. Dip each fillet into the batter, allowing excess batter to drip off.

    Fry the fish

    Carefully place the battered cod fillets into the hot oil, cooking them in batches to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the fish and transfer them to a paper towel-lined plate to drain.

Coleslaw

    In a large bowl, combine the shredded cabbage and grated carrots. In a separate bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth. Pour the dressing over the cabbage and carrots, and toss to combine. Refrigerate for at least 30 minutes before serving.

Tartar Sauce

    In a small bowl, mix together the mayonnaise, dill pickles, lemon juice, capers, and fresh dill until well combined. Adjust seasoning to taste and refrigerate until ready to serve.

    Slice the brioche buns in half and lightly toast them if desired. Place a piece of fried cod on the bottom half of each bun, top with coleslaw, and drizzle with tartar sauce. Close the sandwich with the top half of the bun.
