Waffle batter (plantain-based)

    Prep

    Heat the waffle iron according to manufacturer's instructions. Lightly oil or spray the grids so waffles won't stick.

    Prepare plantain

    Place the peeled ripe plantain chunks in a blender or food processor. Blend until smooth and almost liquefied (about 30–45 seconds). Scrape down sides as needed.

    Mix dry ingredients

    In a medium bowl whisk together all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

    Combine wet ingredients

    In a separate small bowl whisk the egg, milk, melted butter, and vanilla extract until combined. Add the blended plantain and whisk until smooth—there may be small plantain flecks.

    Finish batter

    Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. Do not overmix; a few small lumps are fine. Batter should be thick but pourable—if too thick, add up to 1–2 tablespoons milk.

    Cook waffles

    Spoon or pour appropriate amount of batter onto preheated waffle iron (amount will depend on your iron; roughly 1/2 to 3/4 cup). Close and cook 3–5 minutes until golden and set, following your iron's guidance. Remove gently and keep warm on a wire rack or in a low 200°F (95°C) oven while you cook the remaining batter.

    Prep strawberries

    Hull and slice strawberries. If desired, toss them with a teaspoon of sugar or a squeeze of lime juice and a little zest to macerate for 5–10 minutes to bring out juices.

    Warm Nutella

    Spoon Nutella into a microwave-safe bowl and warm for 10–15 seconds, stirring—just enough to loosen for drizzling. Alternatively, place jar in a bowl of warm water for a few minutes.

    Assemble

    Place one warm plantain waffle on a plate. Top with 2 scoops of vanilla ice cream. Drizzle 1–2 tablespoons of the warmed Nutella over the ice cream and waffle. Arrange sliced strawberries around and on top of the ice cream. Sprinkle lime zest over the top if using, and dust lightly with powdered sugar if desired.

    Serve

    Serve immediately while waffle is warm and ice cream is cold. Optionally provide extra Nutella or maple syrup on the side.
