Prepare Watermelon Shell & Garnish

Hollow the watermelon

Wash and dry the watermelon. Using a sharp chef's knife, cut off a thin slice from the bottom so the watermelon will sit flat. Slice about 1–2 inches off the top to create a lid; set lid aside. With a large spoon or scoop, remove the watermelon flesh leaving about a 1-inch thick shell all around. Reserve the removed flesh for the frozen margarita mix. Pat the inside of the shell dry with paper towels to remove excess juice so the rim seasoning adheres.

Season the rim

Spread the Tajín on a shallow plate. Lightly rub the cut edge of the watermelon shell with a lime wedge to moisten, then press the moistened rim into the Tajín to coat evenly. Shake off any excess and set the watermelon shell on a serving tray.

Prep garnish

Thread pineapple chunks and lime wedges onto small skewers or cocktail picks. Keep mint sprigs whole. Refrigerate garnishes until serving.

Make the Frozen Margarita Mix

Chill ingredients

Ensure the cubed reserved watermelon flesh is well chilled (ideally 30–60 minutes in the refrigerator) before blending. Chilling the tequila and liqueur briefly helps maintain a slushy texture.

Blend the base

In a high-speed blender, combine the chilled watermelon cubes (about 6 cups), tequila (2 cups), orange liqueur (1 cup), fresh lime juice (3 fl oz), and simple syrup (1/2 cup). Pulse briefly to break up the fruit until uniformly liquid but not yet icy.

Add ice and tune sweetness

Add the ice (8 cups) and the optional 1 tsp coarse sea salt. Secure the lid and blend on high in short bursts until the mixture is a smooth, slushy consistency, scraping down the sides as needed. Taste and adjust: add up to 2 tbsp more simple syrup or agave if you prefer sweeter, or another 1–2 tbsp lime juice for more tartness. If mixture is too thin, add 1–2 cups more ice and re-blend.

Chill briefly if needed

If the slush warms during blending, transfer the mixture to a freezer-safe container and freeze 10–15 minutes to firm up slightly, stirring once, until scoopable but still slushy.

Assemble and Serve

Fill the watermelon

Spoon or ladle the frozen margarita slush into the prepared watermelon shell, filling to just below the rim. Pack gently so the slush settles evenly.

Garnish and present

Place the reserved watermelon lid slightly ajar or nearby for presentation. Garnish the filled watermelon with pineapple-lime skewers and mint sprigs. Insert a few lime wedges around the rim. Optionally dust a bit more Tajín over the top for visual contrast.

Serving suggestion

Provide a long-handled spoon and small chilled glasses for guests to scoop from the watermelon, or serve with sturdy straws. Keeps best if kept on a tray over ice; consume within 1–2 hours before the slush begins to melt excessively.
