Chill and cut
Chill sparkling water in the refrigerator. Cut a fresh pineapple wedge about 1/2–3/4 inch thick and reserve a few leaves or a mint sprig for garnish. If using whole pineapple to juice, core and cut chunks and press or blend and strain to yield 6 oz fresh pineapple juice.
Make simple syrup (optional)
If you prefer a slightly sweeter drink, dissolve equal parts sugar and water by heating briefly (e.g., 1/4 cup sugar + 1/4 cup water) until the sugar dissolves, cool, and measure 1/2 oz for the drink. This step can be skipped if your pineapple juice is sweet enough.
Build the drink
Fill a highball or Collins glass with 1 cup of ice cubes, leaving room at the top for the liquids and garnish.
Pour 6 oz fresh pineapple juice over the ice.
Add 1/2 oz fresh lime juice to brighten the flavor.
If using, add 1/2 oz light simple syrup and gently stir once to combine with the pineapple and lime juices.
Top with 4 oz chilled sparkling water. Stir gently once to integrate without flattening the bubbles.
Garnish & serve
Thread the pineapple wedge onto the rim of the glass or float it on top of the ice. Add the pineapple leaves or a mint sprig for visual appeal. Optionally place a lime wheel on the rim.
Serve immediately while sparkling water is still fizzy.
