1. Prepare the Tortillas
Cut the corn tortillas into triangles, like a pizza. You can cut each tortilla into six or eight pieces.
2. Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of tortilla in; it should sizzle immediately.
3. Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches. Fry until they are golden brown and crispy, about 2-3 minutes. Make sure not to overcrowd the pan.
4. Drain and Season
Remove the chips from the oil using a slotted spoon and drain them on paper towels. While they are still hot, sprinkle with salt, paprika, and cayenne pepper to taste.
5. Serve
