Preparation Steps

Prepare the Crostinis
Slice the baguette into 1/2 inch thick slices. Arrange them on a baking sheet and brush with olive oil. Toast in a preheated oven at 200°C (400°F) for about 5-7 minutes or until golden brown.

Make the Cream Cheese Blend
In a mixing bowl, combine the cream cheese, finely chopped shallots, and fresh dill (if using). Mix until smooth and well combined.

Assemble the Rollitos
Spread a generous amount of the cream cheese blend onto each slice of smoked salmon. Roll up the salmon slices and secure with a toothpick if necessary.

Prepare the Toppings
Dice the tomatoes and set aside. Drizzle the toasted crostini with extra virgin olive oil and top with the rolled smoked salmon. Add diced tomatoes on top.

Finish with Balsamic Fig Reduction
Drizzle balsamic fig reduction over the assembled rollitos and serve immediately.
