    Boil the Potatoes

    Peel and cube the potatoes. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and set aside.

    Prepare the Octopus

    In a large pot, bring water to a rolling boil. Add the octopus and cook for about 30-40 minutes, or until tender. Remove from water and let cool slightly.

    Slice the Octopus

    Once the octopus is cool enough to handle, slice it into thin rounds.

    Assemble the Dish

    On a serving platter, arrange the boiled potatoes as a bed. Place the sliced octopus on top. Drizzle with extra virgin olive oil and sprinkle with smoked sweet paprika and salt.

    Garnish

    Finish by garnishing with fresh chopped parsley.
