Preheat and prepare pan

Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking pan and line the bottom with parchment paper for easier removal, or simply grease and flour the pan.

Separate and beat eggs

Separate eggs if you prefer a lighter texture (optional). For a simple, reliable sponge: in a large bowl, beat 6 whole large eggs with 1 cup granulated sugar and 1 tsp vanilla extract using an electric mixer on high speed for 6–8 minutes, until the mixture is thick, pale, and ribbons form when the beaters are lifted.

Fold dry ingredients

Whisk together 1 cup sifted cake flour, 1 tsp baking powder, and a pinch of salt. Sift or sprinkle the dry mixture over the whipped eggs. Using a rubber spatula, gently fold the flour into the egg mixture in two additions, preserving as much air as possible.

Add butter

Fold 2 tbsp melted and cooled unsalted butter into the batter gently and quickly, just until incorporated to add moistness.

Bake

Pour batter into the prepared 9x13 pan and smooth the top. Bake 20–25 minutes, or until the top is golden and a toothpick inserted into the center comes out clean. Do not overbake; cake should be springy.

Cool slightly

Remove cake from oven and allow to cool in the pan on a wire rack for 10–15 minutes. Do not cool completely — cake should still be warm to accept the milk soak more evenly.

Prepare milk mixture

In a bowl or large measuring cup, whisk together 1 cup sweetened condensed milk, 1 cup evaporated milk, 1 cup whole milk (or heavy cream for richer results), and 1 tsp vanilla extract until homogeneous.

Soak the cake

Using a skewer or fork, poke the warm cake evenly across the surface about 20–30 times to create channels for the milk. Slowly pour the milk mixture over the cake, starting at one side and allowing it to soak in. Pour until absorbed; you may not need all the liquid depending on pan and cake density. Cover the pan and refrigerate at least 3 hours, preferably overnight, for full absorption and flavor melding.

Chill equipment

Chill the mixing bowl and whisk/beaters in the refrigerator for 10–15 minutes if they are warm; cold equipment helps the cream whip faster.

Whip cream

Pour 2 cups heavy whipping cream into the chilled bowl. Add 1 tbsp powdered sugar and 1 tsp vanilla extract. Whip on medium-high speed until soft to medium peaks form — stiff peaks if you prefer a firmer topping. Taste and adjust sweetness if desired.

Spread or pipe

Remove the soaked cake from the refrigerator. Using an offset spatula, spread the whipped cream evenly over the top of the cake. Alternatively, transfer whipped cream to a piping bag fitted with a large tip and pipe rosettes or dollops across the surface.

Toast coconut

Preheat a small skillet over medium heat. Add 3 tbsp sweetened shredded coconut and toast, stirring frequently, 2–4 minutes until lightly golden and fragrant. Watch carefully to avoid burning. Remove from heat and let cool slightly.

Prepare berries

Rinse and dry 1 cup mixed berries. If using strawberries, hull and quarter or slice larger berries so pieces are bite-sized.

Decorate cake

Sprinkle the toasted coconut evenly across the whipped cream. Scatter the mixed berries across the top in an even layer or in a decorative pattern. Garnish with fresh mint leaves if using. Keep chilled until serving.
