Make ginger syrup

Combine sliced fresh ginger, sugar, and water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Reduce heat and simmer 5 minutes to infuse. Remove from heat, let cool to room temperature (30–40 minutes) then strain through a fine mesh sieve into a jar, pressing on ginger to extract flavor. Refrigerate. Yields ~6 oz; use 0.5 oz per cocktail.

Optional: keep a few thin ginger slices from the syrup step or slice a fresh thin coin to use as garnish. Chill the mug or glass briefly if you like a colder presentation.

Prepare glass

Fill a mule mug or highball glass with crushed ice to chill the vessel.

Build

In a cocktail shaker or mixing glass add vodka (2 oz), fresh lime juice (0.75 oz), ginger syrup (0.5 oz), freshly grated ginger (0.25 tsp) and 1–2 dashes of angostura bitters (2 dashes recommended). Add a small handful of ice to the shaker and shake vigorously for 8–10 seconds to chill and slightly dilute.

Finish

Strain the shaken mixture into the prepared mug over the crushed ice. Top with club soda (2 oz) poured gently to preserve effervescence. Give a quick stir (1–2 rotations) to integrate.

Garnish

Garnish with a lime wheel or wedge on the rim and a mint sprig tucked into the ice. Optionally float a thin slice of ginger on top. Serve immediately with a straw.

Taste and adjust: if you want it sweeter, add another 0.25–0.5 oz ginger syrup; for more bite, add a few more dashes of bitters or an extra 0.25 oz lime juice.
