Prepare Fruit
Wash and slice
Wash all fruit thoroughly. Thinly slice the orange and lemon crosswise into rounds; if you prefer less bitterness, remove the peel and segment the orange. Core the apple and cut into approximately 1/2-inch dice. Halve or slice larger strawberries; leave small berries whole. If using lime, thinly slice.
Place all prepared fruit in a large pitcher or a nonreactive bowl (at least 2–3 liters / quarts capacity).
Macerate & Combine
Muddle lightly
Using a wooden spoon or muddler, gently press the fruit against the sides of the pitcher 6–8 times to release juices and aromas—don't mash into a puree.
Add spirits and sweetener
Pour the orange liqueur, brandy, and simple syrup over the fruit. Stir to combine, making sure syrup begins to coat the fruit and dissolve into the juices.
Add the wine
Pour the red wine into the pitcher and stir gently to integrate. Taste and adjust sweetness: add up to 1–2 additional tablespoons (15–30 ml) simple syrup if you prefer sweeter sangria.
Cover the pitcher and refrigerate for at least 4 hours, preferably 8–12 hours. This resting time allows the fruit to macerate and the flavors to marry. For best flavor, stir once or twice during chilling.
Finish & Serve
Prepare to serve
When ready to serve, taste the sangria and adjust: add a squeeze of citrus or a tablespoon of liqueur if it needs brightness or depth. Add chilled club soda or sparkling water to the pitcher (start with 250 ml for a lightly effervescent sangria, up to full amount for more fizz). Stir gently to combine.
Assemble glasses
Fill individual glasses with ice (about 1/2 to 1 cup per glass). Spoon generous portions of macerated fruit into each glass, then pour sangria over the ice and fruit, leaving some fruit in the pitcher for additional servings.
Garnish
Garnish each glass with a sprig of fresh mint and, if desired, a thin wheel of orange on the rim. Serve with a long spoon for scooping fruit.
If not serving immediately, keep the pitcher refrigerated and add soda just before serving to preserve carbonation.
