Cake Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
Mix Dry Ingredients
In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Incorporate Boiling Water
Stir in the boiling water until the batter is well combined (the batter will be thin).
Bake the Cakes
Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cool the Cakes
Let the cakes cool in the pans for 10 minutes, then remove from pans to cool completely on wire racks.
Ganache Preparation
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it starts to simmer.
Add Chocolate Chips
Remove from heat and add the chocolate chips. Let sit for 5 minutes, then stir until smooth and glossy.
Assemble the Cake
Layer the Cakes
On a serving plate, place one layer of cake. Spread a layer of ganache over the top, then add the second layer of cake and repeat.
Finish with the Third Layer
Top with the third layer of cake and pour the remaining ganache over the top and sides of the cake.
Chill the Cake
Allow the cake to chill in the refrigerator for about 30 minutes to set the ganache.
Serve
Plate the Cake
Cut a slice of the cake and place it on a dessert plate.
Add Toppings
Top with seasonal berries, a scoop of vanilla bean ice cream, a drizzle of raspberry sauce, and a dusting of powdered sugar.
Garnish
Finish with a fresh mint leaf on top for garnish.
