Prepare the Pie Filling
Mix the Filling
In a large mixing bowl, combine the chopped pecans, granulated sugar, brown sugar, dark corn syrup, vanilla extract, eggs, and salt. Mix well until all ingredients are fully incorporated and the mixture is smooth.
Prepare the Pie Bites
Cut the Pie Crusts
Roll out the frozen pie crusts on a floured surface and cut them into small circles, about 3 inches in diameter.
Fill the Crusts
Place a small spoonful of the pie filling in the center of each pie crust circle. Fold the crust over to create a half-moon shape and crimp the edges with a fork to seal.
Fry the Pie Bites
Heat the Oil
In a large, deep pot, heat the oil over medium-high heat until it reaches 350°F (175°C).
Fry the Bites
Carefully drop a few pie bites into the hot oil, making sure not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown, turning occasionally for even cooking.
Drain and Cool
Using a slotted spoon, remove the fried pie bites from the oil and place them on a paper towel-lined plate to drain excess oil. Repeat with remaining pie bites.
Serve the Pie Bites
Drizzle and Serve
Drizzle the warm pie bites with caramel and chocolate sauce. Serve immediately with scoops of vanilla bean ice cream on the side.
