Sandwich Assembly

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a bowl, combine buttermilk, salt, black pepper, and paprika. Mix well.

  2. 2

    Marinate the Chicken

Add the chicken breasts to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Making the Hawaiian Sauce

  1. 3

    Combine Ingredients

In a saucepan, mix pineapple juice, soy sauce, honey, and sriracha sauce.

  2. 4

    Thicken the Sauce

In a small bowl, mix cornstarch and water to create a slurry. Add to the saucepan and cook over medium heat, stirring constantly until the sauce thickens. Remove from heat and set aside.

Cooking the Chicken

  1. 5

    Grill the Chicken

Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill each breast for about 7-8 minutes per side or until fully cooked (internal temperature of 165°F).

  2. 6

    Add Cheese

During the last minute of cooking, place a slice of Swiss cheese on each chicken breast and close the grill lid to melt the cheese.

Grilling the Pineapple

  1. 7

    Grill the Pineapple

Place the pineapple rings on the grill and cook for about 2-3 minutes on each side, until grill marks appear and they are heated through.

Assembling the Sandwich

  1. 8

    Prepare the Buns

Toast the brioche buns on the grill or in a toaster until golden brown.

  2. 9

    Layer the Ingredients

Spread garlic aioli on the bottom half of each toasted bun. Layer with bibb lettuce, grilled chicken with melted Swiss cheese, grilled pineapple, and red onion. Top with the other half of the bun.
