Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, whisk together olive oil, salt, black pepper, and lemon juice. Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes per side, or until the salmon flakes easily with a fork.

Cooking the Vegetables

  1. 4

    Prepare the Vegetables

Chop the zucchini, bell pepper, and asparagus into bite-sized pieces.

  2. 5

    Season the Vegetables

In a large bowl, toss the chopped vegetables with olive oil, salt, and black pepper.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Making the Lemon Butter Sauce

  1. 7

    Melt the Butter

In a small saucepan over medium heat, melt the butter.

  2. 8

    Add Garlic and Lemon Juice

Once the butter is melted, add the minced garlic and lemon juice. Stir and cook for about 2-3 minutes until the garlic is fragrant.

  3. 9

    Finish the Sauce

Remove from heat and stir in the chopped parsley. Set aside.

Serving

  1. 10

    Plate the Dish

On each plate, place a grilled salmon fillet alongside a serving of grilled seasonal vegetables. Drizzle the lemon butter sauce over the salmon.

  2. 11

    Garnish and Serve

Garnish with additional parsley if desired and serve immediately.
