Fry the Chips
In a deep saucepan, heat oil over medium-high heat. Once hot, fry the potato slices in batches until golden brown and crispy, about 3-5 minutes. Remove and drain on paper towels.

Season the Chips
Drizzle the fried potato chips with truffle oil and sprinkle with salt and pepper. Toss to coat evenly.

Reheat Rib Meat
If the rib meat is cooked and stored in the refrigerator, reheat it in a microwave or oven until warmed through.
Stinging Garlic Sauce

Prepare the Garlic Sauce
Finely mince the garlic cloves. In a small saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

Combine Ingredients
Add red pepper flakes, lemon juice, and salt to the garlic. Stir and cook for another minute, then remove from heat.

Chop Vegetables
Finely chop the red onion, dice the tomatoes, and cube the avocado. Slice jalapeños and chop green onions.
Smoked Gouda Cheese Sauce

Make the Cheese Sauce
In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually whisk in heavy cream until smooth.

Add Cheese
Stir in the smoked gouda cheese until melted and creamy. Season with salt to taste.
Assemble Nachos

Finish with Cheese Sauce
Drizzle the smoked gouda cheese sauce generously over the top. Finish with dollops of crème fraîche and serve immediately.
