Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

Coat the Calamari
Dredge the calamari rings in the flour mixture until evenly coated. Shake off any excess.

Heat the Oil
In a large deep pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari to the hot oil, frying in batches if necessary, until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Spices
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally.
