Method

Preparation

  1. 1

    Prepare the Filet

Remove the filet mignon medallion from the refrigerator and allow it to come to room temperature for about 30 minutes.

  2. 2

    Season the Steak

Pat the filet dry with a paper towel. Rub both sides with olive oil, then season generously with salt, black pepper, garlic powder, and fresh rosemary.

Cooking

  1. 3

    Preheat the Pan

Heat a skillet over medium-high heat. Allow it to get hot, which should take about 2-3 minutes.

  2. 4

    Sear the Filet

Once the skillet is hot, carefully place the filet in the pan. Sear for about 3-4 minutes on one side without moving it.

  3. 5

    Flip and Add Butter

Flip the filet over and add the butter to the pan. Cook for an additional 3-4 minutes for medium-rare, basting the filet with melted butter using a spoon.

  4. 6

    Check for Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130-135°F (55-57°C). Cook longer if desired.

  5. 7

    Rest the Meat

Remove the filet from the skillet and place it on a cutting board. Tent it with aluminum foil and let it rest for 5-10 minutes before serving.

Serving

  1. 8

    Plate the Filet

Slice the filet medallion if preferred, then place it on a plate. Garnish with chopped parsley and serve with lemon wedges on the side.
