Cooking the Short Rib Steak

Season and Sear

Pat the short rib steaks dry with paper towels. Season both sides generously with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side until browned.

Slow Cook

Transfer the seared steaks to a slow cooker. Pour the beef broth over the steaks and add the whole pepperoncini peppers. Cover and cook on low for 6-8 hours, until the meat is tender and easily pulled apart.

Making the Pepperoncini Pesto

Blend the Pesto

In a food processor, combine the pepperoncini peppers, garlic cloves, fresh basil, parmesan cheese, lemon juice, and red pepper flakes. Pulse until the mixture is smooth. Slowly drizzle in olive oil while blending until the desired consistency is reached. Adjust seasoning with salt if needed.

Serving

Plate the Dish

Once the short rib steaks are cooked, remove them from the slow cooker and let rest for a few minutes. Serve the steaks with a generous spoonful of the pepperoncini pesto on top, drizzled with some of the jus from the slow cooker.
