Preparation and Baking
Cook the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
In the same pot, melt 4 tablespoons of butter over medium heat. Stir in 4 tablespoons of flour to form a roux and cook for about 2 minutes. Gradually whisk in 2 cups of milk, continuing to stir until the mixture thickens. Remove from heat and stir in the cheddar, Gruyère, and cream cheese until smooth.
Combine Pasta and Sauce
Add the cooked macaroni to the cheese sauce and mix well to combine. Season with salt and pepper to taste.
Prepare for Baking
Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13 inch baking dish.
In a small bowl, melt 2 tablespoons of butter and mix with 1 cup of breadcrumbs. Sprinkle the breadcrumb mixture evenly over the mac and cheese.
Bake
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy. Let it cool slightly before serving.
