Prepare the Filling
In a large skillet, heat a tablespoon of vegetable oil over medium heat. Add diced onion and minced garlic, and sauté until translucent.

Add ground beef or shredded chicken to the skillet. Season with cumin, chili powder, salt, and pepper. Cook until the meat is fully cooked and browned, approximately 7-10 minutes. Remove from heat.

Assemble the Tacos
In a separate pan, heat some vegetable oil over medium heat. Lightly fry each corn tortilla for about 30 seconds on each side until soft and pliable.

Remove the tortillas from the pan and place a generous spoonful of the meat mixture into the center of each tortilla. Fold the tortillas in half to create a taco shape.

Fry the Tacos
In the same pan, add more oil if necessary and increase the heat. Fry each taco for about 2-3 minutes on each side until golden brown and crispy.

Remove the tacos from the pan and place them on paper towels to drain excess oil.

Serve
Serve the crispy tacos dorados with shredded lettuce, sour cream, and salsa on the side.
