Preparing the Fries

Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Drying the Potatoes
After soaking, drain the potatoes and pat them dry using a clean kitchen towel or paper towels.

Heating the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure that the oil is at the right temperature for frying.

Frying the Potatoes
Carefully add a handful of the dried potato strips to the hot oil. Fry in batches to avoid overcrowding. Cook for about 4-5 minutes or until golden brown and crispy.

Draining the Fries
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Season immediately with black truffle salt.

Grate the manchego cheese using a box grater or food processor, and set aside.

Once the fries are cooked and drained, transfer them to a large serving platter. Drizzle the truffle oil over the fries.
