Citrus Poaching
Prepare the Poaching Liquid
In a large pot, combine 4 cups of water, 1 cup of orange juice, 1 cup of lemon juice, 2 bay leaves, 1 tsp of black peppercorns, and 1 tsp of salt. Bring the mixture to a boil over medium heat.
Poach the Shrimp
Once the poaching liquid is boiling, add the 1 pound of peeled and deveined shrimp. Reduce the heat to low and let the shrimp cook for about 3-5 minutes, or until they turn pink and opaque.
Cool the Shrimp
Remove the shrimp from the pot and transfer them to an ice bath to stop the cooking process. Let them cool for a few minutes, then drain and set aside.
Salsa Cocktail Preparation
Mix the Salsa Cocktail
In a mixing bowl, combine 1 cup of ketchup, 2 tbs of horseradish sauce, 1 tbs of Worcestershire sauce, 1 tbs of lemon juice, 1 tsp of hot sauce, and 2 tbs of chopped fresh parsley. Stir well until all ingredients are fully blended.
Serving the Dish
Prepare the Serving Plate
On a serving platter, arrange the lettuce hearts as a bed for the shrimp.
Serve the Shrimp
Place the cooled citrus poached shrimp on top of the lettuce hearts. Serve with the salsa cocktail on the side for dipping.
