Crust Preparation

Make the Crust
Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake the crust in the preheated oven for about 10 minutes or until it is lightly golden. Remove from the oven and let it cool while you prepare the filling.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar, mixing until fully incorporated. Add the sour cream and vanilla extract, stirring until smooth.

Add the Eggs
Add the eggs one at a time, mixing well after each addition until the mixture is smooth and creamy.

Fill the Crust
Pour the cheese filling over the cooled crust, spreading it evenly.

Bake the Cheese Filling
Bake in the oven at 350°F (175°C) for 50-60 minutes or until the center is set and the edges are lightly browned. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

Make the Jam
In a saucepan over medium heat, combine the fresh berries, granulated sugar, and lemon juice. Stir occasionally until the mixture begins to bubble.

Simmer the Jam
Reduce the heat to low and let it simmer for about 15-20 minutes, stirring frequently until it thickens to your desired consistency. Remove from heat and let it cool.
Serving the Tarta de Queso

Once the cheesecake has cooled completely, remove it from the springform pan. Serve slices topped with the house-made jam.
